We only process 4 or 5 of our grass-fed and finished beef every week and the steaks only account for 8% of the total beef we harvest. Unlike other stores or butcher shops that buy individual beef cuts from large corporations like Cargill, that process 4500 head every day, we only sell our own beef. These butcher shops and stores can buy an unending supply of steaks so they're always available and not worry about selling the rest of the carcass. We have to sell everything nose to tail. We only offer the bulk steaks when we have a lot of inventory.
