Our grass-fed and finished beef Canoe Cut Marrow Bones are delicious roasted with the marrow served on toast or with your favourite steak.

Bone marrow has been recognized as highly nutritious for millennia, some even call it "butter of the gods". Bone marrow is packed full of collagen, gelatin, amino acids and glucosamine as well as vitamins A, K2, B1, B12 and E. It's known to lower inflammation, support immune and gut health, improve metabolic and brain function as well as  sleep. 

There are two or three bones per package.

Prep work: If the bones were frozen - thaw them overnight in the refrigerator. Before you roast them examine them for impurities on the surface (like bone dust) and remove.

SeasonLine a baking sheet or roasting pan with parchment paper, arrange the bones with the marrow facing up. Season lightly with salt and pepper. Use foil to tuck underneath bones that need to be leveled out.

Roast: Place the seasoned bones in a 450 F oven and roast for 15 to 25 minutes, depending on their size, until the marrow begins to bubble up.

Serve: Place the roasted marrow bones onto a cutting board or a platter, then sprinkle with a good quality sea salt. Serve with fresh, crusty baguette slices or small pieces of toast and shaved onions or shallots with fresh parsley salad (inspired by the famous British bone marrow on toast). Micro greens (such as broccoli or pea shoots etc.) taste good along with the marrow and liven up the presentation. You can also garnish with fresh herbs such as parsley, thyme, oregano, chives or a sprinkle of briny capers.


All of our beef cuts are dry aged the old fashioned way for 18 to 21 days for added flavour and tenderness. This is very different from virtually all conventional beef found in big box stores or restaurants that has been wet aged in a plastic bag.

We believe in giving you the best value so all of our cuts are well trimmed and our roasts are tied. Our products are vacuum packaged to add freezer life and for convenience — simply thaw in cool water before cooking.
